Post Christmas: how to lose those holiday pounds! What I eat in a day

Hola friends!
Hope you had a great Christmas!   We had amazing food,  and I was so stuffed!   Now back on track!   My grandparents flew in last night,  so while they slept in,  I had hummus on toast with a roma tomato.   I was craving something sweet,  so I grabbed a crisp gala apple.

I was working in applications for internships and got hungry,  so I cut up an orange to munch on.   I don't like getting the orange oil on my hands,  so I cut it into tiny pieces and ate them with a fork.  

I feel better eating plant based,  and my digestive tract is back on point!

Vegan sushi!

Vegan parfaits

Soy,  Almond or coconut yogurt of your choice
Vluebetries
Syrawberries
Pineapple
Granola
Coconut

Vegan pizza toasts

Toast
Pizza sauce
Daiya cheese
Optional:layer basil or other veggies on top!
Toast

Meals in 5 min or less!

I'm a busy grad student with c lasses,  networking dinners,  happy hours stacked back to back to back.   I know eating healthy and staying in shape is important,  and to enable this lifestyle, I've come up with 5 min or less prep recipes to help you get food on the table in almost no time!

Add bowl recipes from notepad!

Vegan pesto

Walnuts, basil,  blend!

Hummus and broccoli lasagna

Boil lasagna

Layer lasagna,  hummus,  broccoli,  lasagna,  hummus,  etc

Top with nutritional yeast and finely chopped walnuts

Hummus Mac N cheese

Boil pasta
Steam broccoli and other veggies of choice
Mix in hummus and some water
Eat!

Tips for reheatinf: store leftover pasta and hummus separately and mix when you're ready to eat again!

I make these yummy vegan sandwiches to take with me to class!   They're so delicious,  portable,  and can keep a few hours in your backpack!

Bread
Hummus
Mixed greens/50/50 spinach
Shredded carrots
Layer hummus on each side of bread
Add mixed and spinach
Top with julienned carrots
Close and slice!

Welcome to the Jenny Bakes Column!
I love food, and when I first started grad school, I realized how short on time I was.  Instead of working a 9-5 and coming home to cook gourmet meals, my days were packed end to end with school, workshops, networking events and mandatory mixers.  

Everyone has their own way of coping.  Some of my friends turned to boxes of ferrero rocher, some of them turned to the treadmill, many turned to alcohol.  We all have different paths, but I turned to veganism.  For my body type(petite mesomorph), I can gain and lose weight really quickly...meaning that grad school free pizza for a week can mean a 5 or 6 pound difference.  Through experimentation, I found that if I ate vegan, I had more energy, my weight naturally went down, didn't have to count calories, and my skin glowed from all the nutrients and lack of junk.  

I will admit, that since I have sensitive skin, my dermatologist recommended that I add back  eggs into my diet, so although I omit other forms of dairy, like milk, cheese, etc, I *do* eat eggs a few times a week.  

I'm not perfect, but I figure that moving towards veganism is better than giving up and not doing it at all.  

I'm a hclf vegan.   What does that mean?   High carbs,  low fat... Filling your body with love and nutrition!
